Following the practices of craftsmanship and local sourcing, Sea Wolf offers bread and pastry in a space that’s comfortable and welcoming to everyone.

Brothers Jesse and Kit Schumann, opened Sea Wolf in 2014 as a wholesale-only business, providing sourdough bread to local restaurants. In 2016, Sea Wolf moved into the Fremont neighborhood on Stone Way N and began offering retail bread and pastries.

A few years and a pandemic later, Sea Wolf now occupies a 4000 sq ft open-plan production space on Stone Way N and supplies over 35 area restaurants and cafes. A small dining room and spacious, sunny courtyard provide space for retail customers to enjoy bread, pastry, coffee (roasted in-house by Hyacinth Coffee), local craft beer, and wine.

Sea Wolf is conscientious about sourcing ingredients from local and sustainable agriculture and produces all its bread and pastry with grain from the Pacific Northwest. Most of the produce used in the bakery comes from local farms using regenerative or certified organic growing methods.

Claire Frazer
Head of Production

As Bakery Manager, Claire oversees production logistics and communicates with Kit and Jesse about changes and improvements to bakery systems and recipes. She also manages the baking staff, training, scheduling, and the dynamics of a sleep-deprived, yet engaged, group of bakers. She attempts to serve as an intermediary between Kit’s excited creativity and Jesse’s methodic high standards. As Claire manages the baking team, she also spends three days a week working in the bakery on the production line.

Claire loves the demanding process, both intellectually and physically, of making bread and pastry. She revels in developing a deeper understanding of the many variables affecting the final product. She has been working for Sea Wolf since 2015.

When not at Sea Wolf, Claire fly-fishes, journals, tries new recipes, and sweats off all those croissants by playing soccer.

Haley Sive
Head of Sales

Haley oversees the sales teams (retail and wholesale) and works with Kit and Jesse on growth and planning. She designed and currently manages the sales platforms that our customers (both retail and wholesale) use to place orders, helping all the data to integrate seamlessly into our production schedules. She leads all our customer communications on the website, via email, and on social media.

Haley started at Sea Wolf in 2017 working in the back of house with bread and pastry. Even though she doesn’t get to handle dough very often anymore, she is always looking for a chance to hop back on the bench. She loves working alongside the close-knit team at Sea Wolf and getting to share the beauty of hand-made bread with our community.

When she isn’t working, you can find Haley hiking, running, reading, cycling back and forth to West Seattle, or cooking with friends and family.

 

Kala Wolfe
Head of Retail Operations

Kala built and continues to refine the drink program at Sea Wolf Bakers including espresso, beer, and wine. They lead and work alongside a talented team of coffee and customer service professionals ensuring that all products going into our customers’ hands are of the utmost quality. And, they help make sure that each interaction at the bakery is a bright spot in someone’s day. They enjoy being surrounded by a supportive team, getting to jam on coffee nerdery with Dennis of Hyacinth Coffee (the in-house roastery), and getting to sling deliciousness – whether in carb or caffeine form – into the hands of our customers.

Kala comes from an academic background in ecology, which somehow spiraled into a decade-long career in coffee. In that decade, they’ve worked in everything from retail, to quality control at coffee mills and farms, to green buying and roasting, and back to retail again.

When not at Sea Wolf you can find Kala eating at as many different restaurants as possible, driving up to Skagit Valley for oysters and flour, walking her dog, and often in fits of manic baking at home.

Lane Bestold
Food Program Manager

As the Food Program Manager, Lane writes the savory menu and directs the production line for our afternoon and evening fare. He has worked as a professional in the food industry for over a decade. He is extremely passionate about producing high quality products and hyping up the team. He loves creating and sharing his knowledge. His food philosophy revolves around food being seasoned, simple, and sexy.

When Lane is not at the bakery you can catch him getting sweaty at a dance club, loving on his friends, advocating for the LGBTQ community, or hanging at a park.

 

Ames Dempster
Wholesale & Delivery Manager

As Wholesale & Delivery Manager, Ames heads up a small but mighty team of drivers. Her primary goal is to ensure each of our wholesale customers receives their coveted bags of gluten in a timely manner. She believes that providing cafes and restaurants around town with delicious handmade bread and pastries is exciting and a real pleasure.

Ames came to Sea Wolf after a decade of bartending around the Seattle area bringing with her a strong sense of customer service, as well as an understanding of the importance of adaptability and problem solving.

When she isn’t zipping around town with a van full of bread and pastries, she is hanging out with her dog, Fern Mayo. You can find them at the dog park or sitting on the couch watching scary movies. Ames also loves a good board game or crossword puzzle. Please show her pictures of your pets if you see her around town!

Anne Cloudwood
Bread Manager

As Assistant Bread Manager, Anne guides our dough into becoming the very best loaves of bread they can be. She enjoys working with her stellar team of mixers, shapers, and bakers to meet the needs of our neighborhood. From dialing in seasonal changes in mixing temperatures and keeping a close eye on proof, to working on new products and constantly pondering how the sourdough could be even better tomorrow—if there's bread involved, she's interested.

Before arriving at Sea Wolf, Anne worked with baker's yeast in a different capacity, studying its genetic variation in the wild while working on her doctorate at the University of Washington. She aspires to never stop learning about the endless mysteries of fermentation.

When she's not at the bakery shaping hundreds of baguettes as fast as she can, you might find Anne working on a colorful craft project, out in the neighborhood admiring the flora and fauna, or in her home kitchen baking even more bread. If not, she's probably gone out camping some place where you'll never find her!

 

Annica Mandeltort
Retail Sales Manager

As Retail Sales Manager, Annica oversees daily front of house operations, ensuring engaging experiences for customers and staff alike. Annica is a Midwesterner, passionate “super connector,” and anthropologist with experience in nonprofits, museums, and food service. They’ve collected many odd jobs but always return to some combination of community engagement and hands-on work that fosters thoughtful conversations and curiosity.

Annica adores all things food (something they have in common with their cat, Nila), especially how it brings folks together. From co-operative cafes, to food trucks, to renowned restaurants, they bring a holistic understanding of the unique challenges service workers face and look forward to building a supportive environment for their team. They’re excited to grow Sea Wolf through community building, knowledge sharing, and collaboration!

When not at work, you’ll find Annica dancing, wandering farmers & makers markets, attempting new crafts, or enthusiastically lecturing about honey bees and music of the African Diaspora over a home-cooked meal.

Sammi Ledbetter
Assistant Retail Sales Manager

As Assistant Retail Sales Manager, Sammi ensures every customer experience runs smoothly. Apart from internal management tasks, she works alongside the Front of House team helping to create a positive and happy trip to the bakery for all our patrons. Raised in the San Francisco Bay Area, her Italian-American family taught her the values of good food and local produce. She carries those same values into her love for Sea Wolf goods.

You can usually find her at the bakery listening to show-tunes. If not, then she’s probably doing any variety of puzzle/word games or in her home kitchen as she cooks up something new.

 

Ben Smith
Assistant Wholesale & Delivery Manager

As Assistant Wholesale & Delivery Manager, Ben helps to oversee the efficient preparation and execution of the daily wholesale deliveries. Ben’s always looking for new paths towards speed and professionalism, and takes satisfaction in seeing tangible improvement in both himself and the team as a whole.

For years before Sea Wolf, Ben worked in coffee, both as a roaster and on the espresso bar. There, he experienced the width and breadth of food and beverage, in the front lines and behind the scenes. Initially in a small, part-time delivery driver position at Sea Wolf, he’s now fully on board the Sea Wolf train.

When not frantically scurrying bread around King County, Ben will either be watching baseball or Lord of the Rings, making whimsical spreadsheets, and/or smothering his dog, Truman, to death with affection.

Zora Lungren
Pastry Manager

As Pastry Manager, Zora oversees a fantastic team of pastry bakers and shapers. She is as passionate about quality as she is invention. A PNW Native, Zora loves working with local farmers to utilize seasonal ingredients in new and exciting recipes.

Prior to Sea Wolf, Zora worked as the pastry chef of The London Plane and Bakery Nouveau and brings years of lamination and pastry experience to the Sea Wolf team. She is also a classically trained actor and communications coach, so team-building and communication are core to her daily work. She believes that a happy baker truly makes more delicious treats.

When not in the bakery she is probably crabbing on Whidbey Island, seeing theater, walking around Greenlake, or watching a KDrama.

 
 

Kate Moley
Assistant Pastry Manager

As Assistant Pastry Manager, Kate helps to oversee the creativity and consistency of the daily pastry production. Kate’s passion for baking started when she was young and inspired by a caregiver to cook and bake. She loves the technical skill and precision that go into making laminated pastry. And, she loves to learn new baking skills and techniques.

Kate has a passion for sustainability and loves working for a company that prioritizes sourcing from local farmers. She has a bachelor's degree in business administration and attended the Bread & Pastry program at Seattle Culinary Academy.

Originally from the Bay Area, Kate fell in love with the Pacific Northwest when she moved up here for school. When she's not at the bakery you can find her exploring the Seattle food scene for something new to try or tending to her indoor plants. If you hear an infectious laugh at the bakery, it is probably Kate.
